Healthy Meal Prep for Agency Nurses

We know that after a demanding day, the last thing you want to do is spend hours preparing food. That's why we've chosen recipes that are quick and easy to make.

Chicken and Quinoa Salad:

    • Cook quinoa and let it cool.

    • Grill or bake chicken breasts, then slice or cube them.

    • Prepare a salad with mixed greens, cherry tomatoes, cucumber slices, and any other favourite vegetables.

    • Combine quinoa, chicken, and salad ingredients in meal prep containers. Pack dressing separately to keep salad fresh until ready to eat.

Vegetarian Wrap with Hummus:

    • Spread whole wheat or spinach tortillas with hummus.

    • Layer with mixed greens, sliced bell peppers, cucumber, shredded carrots, and feta cheese.

    • Roll up tightly and cut into halves or quarters for easy packing.

Quinoa and Black Bean Stuffed Bell Peppers:

    • Cook quinoa according to package instructions.

    • Prepare a filling with black beans, corn, diced tomatoes, and spices.

Asian Chicken Salad:

    • Grill or bake chicken breasts seasoned with soy sauce and ginger.

    • Prepare a salad with shredded cabbage, carrots, bell peppers, and edamame.

    • Top with sliced chicken and pack with a side of sesame ginger dressing.

Tuna Salad Stuffed Avocados:

    • Mix canned tuna with Greek yogurt, diced celery, red onion, and a squeeze of lemon juice.

    • Cut avocados in half and remove pits, then fill with tuna salad mixture.
